Cabernet Sauvignon is a fantastic grape that offers structure and tannic density in winemaking. A favourite among vintners, it offers everything you could possibly want from a grape, including body, acidity, power, complexity and ageing potential.

What is Cabernet Sauvignon

Cabernet Sauvignon is a red grape variety that is a natural cross of Cabernet Franc and Sauvignon Blanc grape from Bordeaux. The grape variety is synonymous with the wine-making region and is used in much of the winemaking. Known for its thick, durable skin and the vine’s resistance to the elements, it is a favourite among many French vintners, and especially in Bordeaux.

How Does Cabernet Sauvignon Taste?

Cabernet Sauvignon grapes offer a medium dryness but tons of body, making it opulent and rich. Natural flavours from cherry, blackcurrant, spices, tobacco, and cedar come through, which are a delight on the palate. Wines made from this grape variety where it’s dominant in a blend, will be colourful and aromatic and, as they age, will become more distinctive and bolder.

Cabernet Sauvignon Food Pairing

Cabernet Sauvignon rich wines are bolder, so they suit bolder food flavours such as pepper-rich red meat, anything flame-grilled and bold game. While some Cabernet Sauvignon-rich wines are fruity, others can be on the savoury side, which makes them ideal with pungent cheeses.

Great Ageing Potential

Cabernet Sauvignon also has excellent potential for ageing. The grape variety is built to last because of the hefty tannins and suitable acidity. Pests tend to leave it alone, and the fruit’s structure gives it the capacity to age well.

Esprit de Parenchère Bordeaux Supérieur Rouge – Cabernet Sauvignon (majority)

Esprit de Parenchère Bordeaux Supérieur Rouge is a highly concentrated yet very elegant wine. It is powerful but with finesse and offers exceptionally long ageing potential.

Esprit de Parenchère is the Château’s exceptional cuvée, embodying the quintessence of Chateau’s terroir.

It is produced from the two best plots of the estate with extremely low yields.

The blend is composed predominantly of Cabernet Sauvignon; a grape which gives the most structure and an excellent aptitude for ageing.

Cuvée Raphaël – 50% Cabernet Sauvignon

The flagship wine of Chateau de Parenchère, the Cuvée Raphaël, is a dense, concentrated wine with elegant tannins and a mellow and smooth finish. The wine is elegantly woody but not excessively to leave plenty of room for the fruit.

The Cuvée Raphaël is named after Raphaël Gazaniol, who renovated the Parenchère estate in 1958.

It is produced from a selection of the most exemplary estate plots, from vines that are more than 40 years old.

Bordeaux Supérieur Rouge – 20% Cabernet Sauvignon

Bordeaux Supérieur Rouge is a traditional blend that is fleshy, with a very deeply coloured robe. Characterised with a good balance between fruit and tannin, it displays distinct red fruit aromas with a long, sustained finish.
